I just used 2 eggs instead of the egg substitute. I also could not find "whole-grain Dijon" so did half whole grain and half Dijon. It worked. I'd definitely make this again - probably more of a lunch than a dinner meal.

I don't know the scientific reason, but white bread is better for these kinds of sandwiches, as well as French toast.

Maybe I did something wrong? I decided to use sliced whole wheat sandwich bread for this sandwich and dipped the sandwich in egg (no egg substitute available) and milk. My sandwich was too soggy. The flavors were good, but the bread was mushy. I prefer to make a grilled ham and cheese and then fry an egg to eat over the sandwich or to cut a circle in the top bread slice and place the sunny-side-up-fried-egg inside the sandwich so the yolk peeks out.

This sandwhich was delicious! I didn't use the egg substitute though. I used 2 eggs in replacement. My whole family enjoyed them!

Dijon Croque Monsieur is one of our favorite sandwiches to have for dinner served along side a salad. This version was way to dry. We add the Dijon/mayo, ham and cheese to taste and grill them with butter. They are filling and comforting. For some zip you can add some pickle or a little sauerkraut and they're good made with sourdough.

While this recipe looks delicious, I would hate to disappoint anyone traveling in Europe, but if you order a Croque Monsieur, you can expect to get a simple grilled ham and cheese sandwich - and a Croque Madame is just grilled cheese . . After 4 years in France and Belgium I never encountered anything made with bread dipped in egg - I believe "french toast" is an entirely American creation, especially when it is served sweet, with sugar and or cinnamon! By the same token, the Belgians take the prize for the best "frites" or fries, compared to the French!

@ mydonna. I've been cooking and baking for a diabetic for a good many years. Fat free milk my dear, has no added sugar, nor does egg replacement, at least not the one I use. You are right that many packaged fat free products contain a lot of sugar, but packaged fat free products should be low down on your list of foods to buy for yourself, or a diabetic in the household. Fresh and from scratch is always the best, as you can then control what goes into each dish you make, or bake. As for diabetics consuming regular sugar. If you've learned to keep track of your carb allowance or exchange allowance for meals and snacks, properly, any diabetic can indulge in a bit of sugar.

While this is tasty and a healthier version of Dijon Croque Monsieur, you have to be very careful when you have a diabetic in your household because most fat-free items add sugar to their products to make up for the fat to make them taste better.

The Dijon mustard makes a great flavor combination with the Gruyère cheese and ham. This is the first time I had made a croque monsieur and it could not have been easier. I used real eggs and milk for the dipping mixture and served it with a side salad. Next time I will leave out the mayo just out of personal preference. This was a great and easy meal for a snowy night.

So good, I had never dipped a sandwich in egg before, but this was so good I made it on fresh sourdough with apple wood smoked cheese of the same variety. It was a surprise to my husband who was expecting a boring sandwich for dinner!

This makes an excellent lunch! Some substitutions that I made because of what I had on hand.. honey mustard instead of Dijon, Swiss cheese instead of Gruyère, and Egg Beaters instead of substitute. But despite these changes, I think it turned out wonderfully, even my husband liked it and he's picky!

This recipe is so easy and delicious. The only thing is that I can't find the Gruyere cheese anywhere in my town. I just make it with whatever cheese I have on hand. It must be over 5 stars with the cheese it calls for!

My husband and I were both dissapointed with this recipe....really bland and boring, we ended up adding tomato slices after the first few bites just to try to add something extra...needs some spices or something more than just mustard....wouldn't make again....

Yummy! I could easily modify my son's sandwich to exclude the mustard and he loved it. While the Gruyère cheese was yummy, next time I will choose something less expensive, like Swiss. I may also try with different, slightly heartier breads, like whole wheat sour dough. Easy, quick and not much to clean up. I made with with green bean salad recommended in the magazine.
